I don’t even know where to begin here. Life has been awesome I am loosing at an awesome rate and I couldn’t be happier. The boys are good and we are focusing a lot on eating healthier as a family in light of my current #PoloWeightLoss challenge.
They boys have been my little cheerleaders and have been loving all the good things I have been bringing home and have loved joining me at the veggie store to pick out new things. Our weekly trips to the produce store get the boys and my tummy excited, even with a restrictive menu I have been able to get a little bit creative. I love browsing around and grabbing things for the boys and getting fresh herbs to liven up my meals. I can honestly say I will be really excited when I can start slowly broadening my horizons after these 40 days.
But I know what all of you what to know.
How much have you lost so far Eschelle?!
Pretty fantastic am I right? Sticking to the diet is key and has been way easier than I anticipated, I am finding lots of things I like to nibble.
The first little bit there I was having a rough go of it. I had a cold from my kids so wasn’t feeling too energetic to play around with my menu. Then for two days my evening were met with a rough headache thanks to my sugar withdrawals. There was sunshine and rainbows at the end of the tunnel though cause I was a bubbly mess, what I like to call Glenda the good witch times a thousand. If you can believe it.
Best part is the 500 calorie diet is not an issue, it honestly fills you up and even though it is limited it tastes great. In fact I wanted to take a moment here to share with you some of my meal highlights so far.

They look yummy right?? I can tell you that they are and they are all salt free, sugar free and carb free. Making them some of the best meals out there and super good for you. The celery soup is one of my big favs and I make it with my salt free homemade chicken stock infused with ginger. I can tell you the soup is amazing when I make it and perfect for my rainy days here in Vancouver.
So many amazing changes and lots more to loose! I am so thankful for all of you who are joining me on this journey and following along, your support has been amazing and I can’t wait to blow my own expectations out of the water!
